Sushi made with deep-fried tofu became known as “Inari-Sushi” because deep-fried tofu was used to be dedicated to Inari Shrine.

This simple Inari-sushi is the base of other Inari sushi.
Juicy, salty-sweet deep-fried tofu stuffed with brown sushi rice. The deep-fried tofu is simmered in a broth of shiitake mushroom and kelp, soy sauce, and special syrup*, seasoned, then opened into a pocket and filled with brown rice sushi rice.
Finely cut simmered hijiki and lotus root and simmered shiitake mushrooms are mixed for the sushi rice for Inari-sushi.
We use tasty hand-fried tofu that is completely different from machine-fried one, which is now rare. This simple Inari-sushi is the base of other Inari sushi.
