Because brown rice is living as you know brown rice sprouts when you sow it.
When you sow polished rice, it doesn’t sprout. In other words, you cannot receive the life power of rice from eating white rice.
Also, we use brown rice flour instead of refined wheat flour.

Improve Your Immune System Soft and sticky sushi rice is made by adding original sushi vinegar to brown rice cooked with pressed barley and quinoa. Our sushi vinegar, added Umeboshi pickled plum and black vinegar, covers the only disadvantage of the superfood brown rice, which is hard to digest.
Using ingredients such as Umeboshi pickled plum and brown rice black vinegar rich in citric acid to improve bowel conditions and boost the immune system.
In addition, the sushi rice of Chirashi -Sushi and Inari-Sushi is mixed with finely chopped “Simmered hijiki seaweed and lotus root” and “Tsukudani of dried shiitake mushroom”.
For a sweet taste, we use maple syrup, rice malt syrup, and beet sugar containing minerals. We don’t use refined sugar which declines the immune system.

We use additive-free and safe ingredients such as long-aged miso, brown rice black vinegar, soy sauce aged in Cedar barrels, natural sea salt full of minerals, cold-pressed rapeseed oil and sun-dried Umeboshi pickled plums. They contain plenty of minerals and enzymes to support mental and physical health.

We try to reduce the use of sweetening products by using cooking methods that bring out the natural sweetness of ingredients as much as possible.
When we use sweeteners, we use maple syrup, beet sugar and rice malt syrup containing minerals and oligosaccharides.
The white sugar that deprives the body of minerals is not used.
